Hertfordshire. Tring is a lovely town at the foot of the Chiltern
hills and home to the famous Champneys health Spa. Before migrating to the IT/Business world in the nineties I worked for many years as a chef in kitchens all over London and the UK. I still love to cook and to talk about good food and cooking with other enthusiasts. I still claim that in the late nineties I was turning out the best Fish and Chips in the whole of London at the Butlers Wharf Chop house (A Terence Conran restaurant famous for producing classic British food with absolutely no compromise on quality of service or ingredients) The fish was always fresh that day, the potatoes for the chips were handcut and "double fried". The Tartare sauce was made fresh every day with real mayonnaise, capers, gherkins, parsley and tarragon as were the "mushy" peas. A combination of split peas and dried Marrowfat peas cooked with a ham hock for flavour. I used to work on the Grill in this restaurant and from my station had the best view in london Another passion of mine is finding food for free in the countryside. I really enjoy hunting for fungi, I'm not an expert by any stretch of the imagination but I have at least 6 varieties that I can definitely identify so i usually stick to them. Another favourite is Nettle soup. this is something I would say everyone should try because it's not at all like you would imagine and it's a lot of fun taking the family out and gathering the nettles! (don't forget your gloves!). The rich green colour is beautiful and the subtle flavours are sublime. Especially when served with croutons and cheese. I suppose the closest thing you could compare it to is spinach soup (but it's much better) If you want a really simple recipe for this please let me know and id be happy to send it to you. When I was a teenager I was a punk and some of my favourite bands were Sham69 (listen to Sham69 here), UK Subs, Stiff Little Fingers, The Exploited, The Stranglers and The Clash. Obviously as I grew up my tastes mellowed and now I love to listen to all kinds of music but I must admit a little of the old punk in me rose to the surface the other day when my 20 year old son rang me up from University and invited me to go to a Stiff Little Fingers gig with him. |
